"MMJ Live Vol. 3 is set to be released sometime in the summer.
Regarding a new studio album- Tom told me that while they had a successful studio session in November, and have more time booked later this month, they are taking their time, with no deadlines to hit or release date planned (yet)."

Any idea of what show/year Live III will be from?

It's pre-2015... in my opinion it's one of their "greatest hits" concerts that put them on the map for a lot of people. It's not the Beacon run though, for those wondering.

Roo 08 had a fair amount of covers and one off stuff didn't it? Not what I would call greatest his anyways and it seems a bit long for the vinyl treatment. I'd guess like Red Rocks '12 Night 2 or something.

So I put together a spreadsheet to see what percentage of shows have been released by the band by year, counting official albums & EPs, and the releases on nugs.net (OBH, Red Rocks, Port Chester, the rest).  I have a screen shot with better data but posting pictures ain't no good here, so here's a basic breakdown.
