Funny you should mention Dogfish, wharf rat (love your name, btw!).  I've never tried any of the Dogfish brews before, but got tickets like, literally minutes ago for a beer and chocolate pairing featuring the Dogfish brews.  Here's the menu:

60 Minute India Pale Ale
     
Midas Touch Golden Elixir paired with fig-ginger chutney, puff pastry, chocolate dukka

Red & White paired with butter lettuce, golden & candy striped beet salad with goat cheese and chocolate-orange vinaigrette

Indian Brown Ale paired with toasted chocolate pan d'spice, Pumpkin Ale butternut squash puree, bacon

120 Minute IPA paired with braised beef brisket, red onion, cilantro, orange, coriander, cocoa nibs

Palo Santo Marron (Holy Tree Brown) paired with chile ice cream with chocolate shavings

And regarding the tasting:  :o :o :o

You are in for a real treat!  Some of those pairings sound like heaven.  I should have said "Any of the Dogfish Heads that I've tried", because unfortunately I have not had the pleasure of sampling the Palo Santo or the Midas Touch, but the others are exceptional!  The 60, 90, and 120 minute IPA's, 90 especially, are what scratch me where I itch :)

With a huge, Pacific Northwest hop aroma & character upfront, Storm King subsides into massive, roast malt complexity. More flavor than mere words can adequately describe. Rich and substantial, it will warm your heart.

Alcohol by Volume: 9.1%

Had it, its good.

The only bad Victory Ive ever had is Golden Monkey and their Lager...Everything else Ive tried - which is at least a dozen of their beers - is very good or better

For an imperial stout...I mean, if you blind folded someone and gave them this beer, I'd bet they'd never guess the style.  It's a little roasty, but otherwise the hoppiness and lightness make this stout very drinkable.  I'm not impressed with every Victory beer (though Hop Devil is a favorite), but this stout is great!

Have you had Old Horizontal? V-Twelve? St Boisterous? Festbier?

I like their pilsner Prima Pils a lot too.

Once again, stay away from the Hop Head Ale from Mishawaka. I finished a trio treat of Avery, Bell's, and that yesterday and that shit gave me a headache! I am glad I am out of it.

My buddy has a mystery sixtel for superbowl. He wont' reveal what it is, but he has revealed that it's NOT Sly Fox Anniversary (an excellent, new-er brewery from the Philly area who puts out a lot of their stuff in cans) and it's NOT Dogfish head Red and White

I'm expecting either 90 min or something Victory.

Maharajah-Avery's IIPA. Very well balanced for a double. It has that deep golden honey color that I like as well. Not nearly as hoppy as the Moylander, but would def. buy again. No sweet ass barley finish, a big plus for me.

Can you give me more details on the DC location?  This might have to be a stop when we're there for the Dead show in April!

Hmm...I live in Pittsburgh and only stopped by there because I met a friend from school who lives in the are there for some brews and grub before a show in DC, and this was a couple years ago, but I think it was in Gaithersburg, MD. About 25-30 min north of DC.

I think there are only 3 actual restaurants and thats the only 1 in Maryland, so if you go to their website it should be easy to find the location.

Thanks.   After a quick run thru of their site, I only saw info. for the one in DE.  I'll look into it further when I have some more time.
Edit:  You were correct.  Didn't take much time to come up with restaurants in Falls Church and Gaithersburg, as well as the original in Rehoboth.

I've had it twice penny, and it is one of the smoothest, best tasting beers I've ever sampled.  My buddy brought some Chimay Red over to the house a few years ago.  He knew all about the history, of which I only remember that it has been brewed by the Trappist Monks of the Chimay region in Belgium for over a hundred years.  And the name Chimay has some sort of cheese implications?
I do remember it being a very strong beer, maybe a 10-11% alcohol volume, so if you try it, you may not want to go too overboard. :D

People who love Chimay really LOVE Chimay!  I've tried it a few times, but just don't really care for it, and I love Belgian beers.  So I dunno.

Thanks, NoVa.  Are you heading to the DC show?  As it stands now, I will be with a few others who used to live in the area just a few years ago, but if I think of anything you might be able to help with, I'll give you a shout.  Actually, I did find on Google that Dogfish has restaurants in Falls Church and Gaithersburg.  Is the Falls Church location closer to DC than Gaithersburg?

Depends what variety, sort of. I like it, but I don't rave about it. However, I'm not a huge fan of tripels.

Still, the other night I had a bottle for free, and it was the best tasting beer in a long long time because of it.

I may not be the best judge, because I'd take a bomber of Ruination over Chimay any day.

It is a really interesting story - the monks, the cheese...what's not to like?    ;D

The beer pairing isn't until the 12th...are there any Dogfish brews I should try in the meantime, that aren't on that list?
