Wow! Neil Young and MMJ together!!! Only in the land of Oz  :)
I work in NY at Lazard and I am the internal contact here for our Sydney office. Hopefully I can find a reason for me to get down to Oz in January for the show in Sydney!!! That would be amazing.  :D

I get some Jools Holland re-runs on my ON DEMAND but if anyone can shed some more light on these shows, please do!   The ones I've seen have been several bands playing one or two songs shotgun style in a half hour show.

"Later w/ Jools Holland" is normall a multi-guest show, several bands normally get to do two songs, unless they are "huge" then they may get to do more.  All the bands are in one big studio, often set up in a circle, so they get to watch each other. The newer format is such that the second show of the two that you mentioned is normally a repeat, but possibly with additions, different takes.

Can't freakin' wait. ;)

Is it on live in the UK?  Or pre-recorded.  Will it run at the same time on a channel in the US?

I'll be seeing MMJ 8 times in 10 days, and Neil Young 6 times in 10 days!! Thats gotta be a good time in anyone's book.  Bring on January... :D
