Title: Vegetarian Victuals!

So this is by no way out there to detract from our lovely Foodies Unite thread.  But some of us folk around here are vegetarian.  And others just love veggies.  Come share your recipes, restaurant experiences, and all thoughts vegetarian.

Allow me to start with this kick ass recipe I found in Sunset magazine.  It is yummy and oh so easy to prepare:

Black pepper tofu and green beans
1lb green beans (trimmed and halved)
2 tbsp lime juice
2 tbsp tamari (or soy sauce)
1 tsp pepper
14 oz drained firm tofu
2 tbsp canola oil
1 tbsp packed brown sugar
1/2 cup sliced shallots

1. Bring a medium pot of water to a boil, add green beans and cook until bright green (~3 minutes).  Drain and rinse with cold water.  In a small bowl, mix lime juice, soy sauce or tamari, and pepper, then set aside.
2.  Cut tofu into 1/2 inch thick rectangles.  Heat oil in frying pan over medium-high heat.  Add tofu, sprinkle with sugar and cook (turning occasionally until evenly browned, ~10 minutes).  Stir in shallots and cook until browned, ~ 3 minutes.  Add green beans and cook until warmed.  Pour in soy mixture and stir to coat.

We served it with quinoa but rice is fine too.  Super easy and super yummy!

Great kick-off for a great thread!!  That sounds de-lish!

Here's my Butternut Squash soup recipe!!

2 butternut squash
2 sweet potatoes
2 other potatoes (or 4 sweet potatoes!)
1/2 - 1 can of pumpkin puree
3 carrots
*pinch of nutmeg (or pumpkin pie spices)
*salt/pepper to taste
1 bay leaf

And I use a couple bouillon cubes, and enough water to cover the cooking potatoes

1. Slice butternut squash in halves, long-ways
2. Scoop seeds out, turn upside down and bake uncovered for 30-45 mins at 350-375 degrees
3. While squash cooks, dice up potatoes and carrots and place in a pot, fill with water just enough to cover them so they cook--- add bouillon cubes and stir a few times while they cook
4. When squash and potatoes/carrots are cooked, scrape the squash out of its skin and put into blender
5. Save the potato/carrot broth, but strain carrots and potatoes out of broth and pour them into the blender with the squash
6. Add as much pumpkin as you like into the blender
7. Slowly add in a bit of the broth into the blender until it reaches your ideal consistency
8. Puree for smooth creamy soup, or pulse a few times for a chunky goodness  :)
9. Pour all contents back into pot and simmer on low for 20-30 more mins
   **Add spices during this stage

I'm not vegetarian, but  try not to eat meat everyday. Too many documentaries about food and america's diet have scared me into eating well!

I NEVER have luck cooking tofu, though I love it.

Here are a few tips that I have learned over the years:
1. Drain your tofu.  Do this by putting the tofu between 2 plates and placing a heavy object (I use cook books) on top.  Gravity then slowly squeezes out the excess water.  Or you can pick up the plates and gently squeeze them together, if you don't have time.  I prefer the first method when I want pieces (ie squares, slices, cubes, etc) but if I am going to crumble the tofu, then method #2 is used.
2.  Also, I rinse the tofu when I take it out the packaging.  I like to wash off the water from the container, makes it feel fresh or something.
3.  If you can plan ahead, try this out: remove from the package and rinse the tofu, press the tofu in way that preserves the shape (for the most part, don't fret if it cracks a little), put in a freezer safe container and freeze overnight, defrost and press again.  Now you have made the tofu more spongy and ready for your marinade.  You can pan fry, bake, stir fry or even steam the tofu.  Just be sure to marinade, speaking of...
4.  Marinade!  It is the most vital element to good tofu dishes.  It is amazing how much you can do with simple marinades.

Hope this helps.  And don't forget tofu's favorite cousin, tempeh.  MMMmmmmm, tempeh...

whoo hoo!  vegetarian MMJ fans.   Now that IS a niche interest group.   Count me in! (vegetarian since age 4)

don't have recipes on hand but for anyone looking for cookbooks, I use heavily and recommend:

quick vegetarian pleasures, Jeanne Lemlin
vegetarian planet and entertaining for a veggie planet, Didi Emmons

the moosewood book is well known but some of their others are better IMO - low-fat favorites, daily special, new classics

the roasted vegetable, andrea chesman -  I LOVE roasting vegetables and my expertise (although that's too strong a word) comes from this book.   Not a lot of full meal recipes but all kinds of advice, sides, etc.   My favs are fingerlings, cauliflower, brussel sprouts, and green beans.

I tend to cook veg more often than not.  Lately my go-to easy-peasy fall meal is sauteed/wilted kale, leeks, creminis, and garlic with lots of lemon, thyme and nutmeg served over over parmesan polenta.  You can add bacon if you like.

Totally!  It was the vegetarian primer for me and most my friends.  I am most partial to Moosewood New Classics.  While it is not written by Molly Katzen (and therefore does not have her awesome doodles), it has never, ever failed me. 
*side note, I know someone who is family friends Molly Katzen and I was star struck when I found out that their families used to celebrate High Holidays and Passover with her family  ;D
The tofu hijiki burgers in New Classics are a favorite of my friends, especially the avocado/wasabi dressing.  And the hub's all-time favorite comfort meal is the Homespun Pot Pie in this cookbook. 

Currently digging Veganomicon, even though I am not a vegan.  Excellent recipes....

Butternut squash
butter
dark brown sugar
cinnamon
salt

sautee squash until it starts to get tender (go light on the salt it's really just to help pull the water out.). Add in BS and Cin and mix until done. It's a great side for a savory dinner or even better the next day as breakfast.

anyone have any luck/skill with lentils?  I keep trying with dry lentils, and they always turn out okay, but not as good as I know they have the potential too. Any recipes to make them a solid side dish would be appreciated

Do you soak those babies overnight, e?  You supposedly don't have to, but I've always liked the results of soakin' em.

After I soak them, I throw them into a pot of fresh water (not their soaking water) with a couple bouillon cubes, 24 bay leaves, onion and/or garlic, and any other appetizing veggies I have on hand.... def. carrots and potatoes

Ok, one bay leaf should do.... I wrote about a lentil soup I made on here last year (or earlier this year?...) and had a bay leaf issue with using too many....  ::)

I'm sure other people will have other ideas for ya too, lentils are awesome!

I've also made a Mujadara; lentils and candied onions + seasoned rice... (salt & pepper to taste of course) though I can't seem to get the Mediterranean seasonings as good as the restaurants do.... I've still been quite pleased with my results!

okay well I just made a GIANT pot of lentils (I eat em literally every day,  so I make giant pots at a time since I started making my own). at then end of this pot in a few days I'm going to try it with onions/garlic/carrots for sure. and if I have any celery or carrots lying around i may just chop those babies up too.

I am not so sure. If I can write ecstasy and all the abc's of cuss words, I don't think that is the reason.

Modification:
Perhaps there is a legit reason for the "M" word to not be mentioned on this site. But I think me trying to mention m.o.l.l.y katzen, acclaimed chef and author, and not being able to is silly. pudding is seriously uncool.

yes, instilled by parents.   We moved to England and they thought the meat there was awful, so quit.

Kale and chard are my favs so I'll give this a shot.   Thanks!

My standard morning smoothie is:

1 banana
1 peeled apple
1 lemon, sides cut off and halved so seeds can be removed
1 bag frozen blueberries
1 bag frozen red fruit - raspberries or strawbs
3/4 c water
fill rest of blender w/ kale (probably 2 cups / 2 handfuls)

I used to do more of a yogurt-based but this is lighter, less sugar, and the kids love it.   It comes out green but you can't taste the kale at all.  (that recipe makes enough for 4)

dunno if you have Trader Joe's stores near you, but they sell cooked lentils in a shrink-wrapped package.    These are my absolute staple.  Sure it's lazy, probably overpriced, and a lentil expert like woodnymph would shake her head, but I keep packs of them in the fridge.
- throw them into a pot of chili
- pasta salad w/ some roasted veggies and dressing
- mix w farro, green beans, feta cheese
- saute up some onion, celery, carrot then dump in veggie broth and lentil for a fast soup

I use them all the time.

While I'm on lentils, let's not forget to praise the red lentil.   Love that little guy!  much quicker to cook too.   I use for a red lentil chili or for a vegetarian bolognese.

 ;D  Thanks mag33t!  I wouldn't say I'm a lentil expert just yet!   :P  I do love the little red lentils though!  Those ones I've actually not even soaked, they don't take long at all to cook up!  I used those for a Khichri (Indian dish) once and loved it!  (red lentils with garam masala seasoning & onions YUM)

Love your quick lentil ideas though, I'll have to try them with the green beans and feta, I can tell that'll be delicious already!

Nope, on my laptop and I double checked it by using my iPad. Both allowed me to use the "M" and "C" word when typing my post. But when it posted, m.o.l.l.y. turned into Winnie the pooh & c.en.s.o.r.s.h.I.p. turned into pudding. Pretty funny substitution, but it is the MMJ forum doing this, not my computers.

Anyhoo, back to veggies...

I don't think so.  Remember that fairly personal article about Jim came out a month or two ago?  I think I remember the M word being the name of Jim's lady friend.  That's when the c word became a banned word.  I guess the M name is off limits, too.   ::)

shit i can see Molly being jims gf OR the drug. Lets be honest, that drug has really taken off recently, and MMJ is a festival band, which means people eat it a lot at their shows. At wakarusa this year it was almost scary how crazy people were about it. I've read that its not addictive and not so bad for you, but man at Wakarusa you'd think people didn't know how to have fun with out it. people would grab me at random moments during the festival and basically beg me for some. it was like walking down an alley filled with people pan handling. its jeffed up


but yes, back to the veggies.....


I have looked and looked and looked and CANNOT find any lentils except dried lentils at all the grocery stores around me. MAybe I should check a health food/organic store... I always look in the canned bean section and the dried bean section and the "organic/health" section of kroger. i keep striking out

Well definitely weird that you're having trouble finding them canned... I've always been able to find them even in the regular grocery stores... I'd ask someone who works there... but they're definitely in the health food stores too!!!

Oddly enough I've cooked a lot of vegetarian the last couple of days disregarding the 8lbs of short ribs I braised.  Lots of soba noodles and yesterday I made some veggie gyoza.  Sauteed baby Chinese cabbage with scallion and finely chopped carrot with vegetable oil, a little sesame oil, grated ginger, minced garlic and finely chopped Vietnamese red chiles.  Stuffed in gyoza wrappers using a a standard egg wash then steamed in a wok then pan fried for a crispy crust on both sides.  Dipped in a tradiitional Japanese dipping sauce of soy sauce, rice vinegar, La Yu (chili oil), and nanami togarashi (Japanese 7 spice mix).  Was good!

And per usual, very late last night, not knowing what I was doing, I decided to make candy bars.  I made a caramel and chucked Raisin Bran Crunch and coarsely chopped walnuts and almonds into it and shaped it on wax paper and froze it.  In a double boiler, I melted down some semi sweet chocolate with a little brown sugar, butter, and whole milk.  I coated the caramel bar with the chocolate and refroze.  Yum!

They weren't pretty but they tasted damn good.  I'm thinking if they weren't eaten cold, they would have melted since I really have no idea how to temper chocolate or work in pastries and desserts at all for that matter.

It was no corn pop pyramid however

Made some mini-stratas to bring to work for lunch/breakfast this week: baguette, egg, milk, caramelized onions, garlic, creminis, sundried tomatoes, broccoli, a bit of feta and parmesan, and a sprinkle of red pepper flakes.

3 carrots
*pinch of nutmeg (or pumpkin pie spices)
*salt/pepper to taste
1 bay leaf

And I use a couple bouillon cubes, and enough water to cover the cooking potatoes

1. Slice butternut squash in halves, long-ways
2. Scoop seeds out, turn upside down and bake uncovered for 30-45 mins at 350-375 degrees
3. While squash cooks, dice up potatoes and carrots and place in a pot, fill with water just enough to cover them so they cook--- add bouillon cubes and stir a few times while they cook
4. When squash and potatoes/carrots are cooked, scrape the squash out of its skin and put into blender
5. Save the potato/carrot broth, but strain carrots and potatoes out of broth and pour them into the blender with the squash
6. Add as much pumpkin as you like into the blender
7. Slowly add in a bit of the broth into the blender until it reaches your ideal consistency
8. Puree for smooth creamy soup, or pulse a few times for a chunky goodness  :)
9. Pour all contents back into pot and simmer on low for 20-30 more mins
   **Add spices during this stage

I prefer it pureed to a creamy goodness.  An awesome finish is a dollop of either creme fraiche or greek yogurt with a bit of chopped herb and chopped toasted nuts

Can't wait for tomorrow's feast!  Rob, I made a batch of the creamy butternut squash soup tonight, and I do love that style too!  Glad I got that knocked out today though, just gotta reheat tomorrow!

I'm also working on two pies... I've got a housemate on a raw/flour-free diet, and a housemate with a nut allergy, so I'm creating two pumpkin pie monsters!  (Thankfully I will gladly eat both pies!  :-X)  I just made the first one with a gluten-free, nut-free crust, but I don't want to try it and make a cut mark in it  :(  Smells so gooddd  :(  I used 2 local organic chicken eggs and some organic condensed milk, I hope it tastes as good as it looks and smells!

And now I'm soaking 4 cups of pecans, a cup of cashews, and I soaked some medjool dates already and they're chillin in the fridge.  The raw pie monster is gonna have a pecan/maple syrup/coconut/date/(maybe a tad of cocoa powder?) crust.  And the filling is pumpkin of course, vanilla, cashews, and according pie spices pureed to a creamy heaven..... and all of it chilled for an hour or so to firm it up a bit.  Wish me luck!  Haven't ever made anything like it before, but I'm feeling pretty dang confident, and I'm glad I remembered to start soaking everything tonight!

Coming up tomorrow... gluten-free stuffing!  I made a batch last year that was damn near perfect 'cept for I'd burnt the damn thing to an unreasonable pitch.  ::)  If you saw my feeble attempts at scraping off the burn and digging for unburnt bits....  :-\  Keeping an eye on that crapola tomorrow!!!

Hope everyone's gearin up for a feast tomorrow and gratefulness for bein' aliiiiiiive :-D

PS I'm totally all for fixing up a turkey, for non-vegetarians.... but I totally suggest finding a local healthy option, vs. the often low-quality ones from the grocery store....  I'm getting to this point now where I think I'd be ok with meat again, but I'll be one picky mofo when that time comes........

And for the record, there was a turkey about 20ft. up a tree in my backyard today, out the kitchen window while I was making all this food.... how hilarious, I beckoned for it to stay nearby where it's safe  :P

Damn I wish I was at your place tomorrow!

Louisville's vegetarian restaurant choices have gotten quite good very recently. My favorite restaurant ever's (Zen Garden - vegetarian Asian food) owner opened two more in the past couple months. Roots is a vegetarian/vegan restaurant that's somewhat fancy and DELICIOUS. Heart and Soy is in the same building, and is vegetarian/vegan "street food". It's cheap, healthy, and fucking tasty. You can't beat that. They make their own soy milk and tofu in house. Occasionally they have frozen pizzas, desserts, and other goods you can buy and take home. It definitely helps that is literally less than 60 seconds from my house walking.

Also, a Maddio's pizza opened near my house. It's a fast food pizza joint that lets you chose from 60 or so different toppings. They even have gluten-free crust, tofu, and vegan cheese! Its one restaurant that I actually eat the meat though, because it's all humane. Free range, grass diet, hormone free, small farms, the whole nine yards. It was founded by the guys who founded moe's. moe's also has humane meat, gluten free stuff, locally grown vegi's.

ALSO, we just got a trader joes. Now I can afford the food I always wanted from whole foods!

I ate at someplace on Bardstown last August when I pulled through.... (or August 2010, rather) it supposedly used to be an Indian restaurant, then maybe the ownership changed or some-such.... then it was a new place... had a really cool name, but my memory is sometimes for crap... (Something like "___ Nirvana?"  or "___ Karma?")  OH I just remembered that  they had a really good Margherita pizza, and it was before I committed to gluten-free, so I devoured it in probably 7 seconds, it was great  8)  Or maybe it WAS gluten-free.... wow brain....... Anyway, I really wanted Indian food and had quite a mission trying to find it!  The first place my gps took me to had burnt down previously... then the second spot was closed on whatever day of the week I'd been there.... then the third place was the one with the name-change... and some awesome dreadie guy playing his guitar on his porch explained that all to me hahah

But I loved the exploration, I walked up and down Bardstown and saw Cumberland Brews which made me smile for at least 20 minutes at the clever Dead theme, and some really cool little shops and such. Maddio's sounds awesome!!  Wish I'd have known about it, but my trip through was pretty spontaneous!  Love their food ethics though, amen to them!

Glad you finally got a Trader Joe's!  They waited for me to move, then they put one up 15 minutes from my parents' house back home yay!  :-\  But whatever, at least visiting will be a bit easier!  8)  And that's sweet that you've got the option now for some good grub!

I gotta get outta this thread I'm starving now!!   :bath:

Karma Cafe? I only went there a time or two before it got replaced (recently) by Dragon Kings Daughter, which is amazing Japanese-ish food. The building that burnt down recently was Cafe Mimosa

Well the pies turned out WONDERFULLY today!!  And the veggie gluten-free stuffing I made was a hit!  (It was so good it was actually hard to distinguish from regular stuffing!)  And I've got soup for dayyyyysss, which will be nice  :)

One of my favorite comfort foods I grew up with is natto maki (fermented soybean rolls).  Just heated fermented soybean with hot asian yellow mustard, wasabi and soy sauce rolled in Japanese rice with scallion and wrapped in roasted seaweed.  For those that haven't tried natto I say go for it though most Westerners find the smell and taste offensive.  Additionally, after heated, it has the slimy, sticky texture associated with okra.  I love it!

Every time I order the natto maki I get the "are you sure?".  ;D. Looks good Ruckus!

Made a roasted beet and wheatberry salad for Thanksgiving.  Woody, your dishes sound delish!

That natto maki looks fantastic!  I've been on a huge seaweed kick lately....... there's an apple-smoked dulse at the local co-op sometimes, and mmmmmmm

Toasted nori is always a crunchy tasty treat!  Looks great!  :thumbsup:

And thanks Maggie!  I just finished the last of my gluten-free pie tonight  :-X  I'm leaving the last slice of the raw pie for my housemate who couldn't eat the other pie...  And still eatin' on the squash soup :-D

I'm making Hue-ish soup tonight. I know Hue is almost defined by the meat, but I'm making it with tofu. So basically it'll be Spicy Vietnamese Noodle Soup w/ tofu. And spinach filled steamed wontons. I'm excited and i haven't even eaten breakfast yet.
